GREEN PEA GUACAMOLE
How many ways you can make guacamole? Like hummus, the possibilities are endless. This time I wanted to add a source of protein to it, so when I dip my nachos, I have all 3 essential macronutrients (carbohydrates from nachos, protein from peas and fat from avocado).
This is a great snack option to promote satiety while promoting healthy blood sugar levels. So often I hear people saying that guacamole has too much fats in it, but the fats from avocado are good ones, mostly the monounsaturated type.
Avocados are also rich in vitamin E, an essential nutrient for skin health and a strong antioxidant that helps to fight free radicals.

Ingredients
-1 cup (or 140gr) of frozen peas
-1 jalapeno
-2 tbsp chopped coriander
-2 avocados
-2 green onions, sliced
-1 lime, juiced
-1/4 tsp salt
-pumpkin seeds to garnish
Method
- Defrost the peas in a pot of boiling water.
- In a food processor, blitz the peas, jalapeno, coriander and salt. Process until almost smooth.
- In a bowl, combine the mashed avocado with the green onions, lime zest, lime juice and the pea purée. Season to taste with salt and garnish with sunflower seeds and additional peas to serve.
- Serve with nachos/crudités or use it for tacos.
