CHIA PUDDING WITH SEARED PLUMS
This Healthy Chia Pudding with Seared Plums is a delightful and nutritious treat that combines the creamy texture of chia seeds with the rich, caramelized flavour of seared plums. INGREDIENTS
-4tbsp chia seeds
-400ml plant-based milk of your choice (without added sugar)
-2 big plums or 4 smaller ones
-1tbsp coconut sugar (or sub for brown sugar)
-a pinch of cinnamon
METHOD
1-in a bowl, mix the chia seeds, plant-based milk and a pinch of cinnamon. Divide into 4 ramekins and place them in the fridge for at least 6 hours.
2-While you heat an iron skillet, wash the plums and cut them in half, removing the pit. Sprinkle the sugar and some cinnamon on each of them.
3-Once the skillet is hot, place the plums face down and let them sear for 10 minutes, flipping them halfway thought. Set aside until cool.
4-Slice the plums and divide them into the 4 ramekins. Optional: add some fresh mint.
You can store the plain chia puddings in the fridge for up to 5 days, but I recommend adding the plums only prior to serve.
